Eggs Benedict is a traditional brunch or breakfast dish that consists of two halves of an English muffin topped with a poached egg, bacon or ham, and hollandaise sauce. Hollandaise is a tangy, buttery sauce made by slowly whisking clarified butter and lemon juice into warm egg yolks. It is usually seasoned with salt, and either white pepper or cayenne pepper. Hollandaise is one of the five mother sauces in French cuisine. Besides being a key ingredient of Eggs Benedict, it is also often served on vegetables such as steamed asparagus.
