Beef Wellington is a dish consisting of a fillet of beef tenderloin wrapped in puff pastry. Food historians generally agree that the dish was originally created to honor the Duke of Wellington after defeating Napoleon during the Battle of Waterloo in 1815. Such an iconic character needed immortalising, so naturally they named a pastry encased beef dish after him. Beef Wellington saw a surge of popularity in the late 1950s. Richard Nixon was so fond of the dish, he had White House Chef Henry Haller serve it at every state dinner!
